We use only six botanicals – Juniper, Coriander Seed, Cascara (or Coffee Cherry), Fresh Naval Oranges, Green Cardamom and Black Cardamom to create a deliciously simple yet full flavoured gin. Sometimes less is more.

In a deal sealed with a handshake, the Misters who make Melbourne Moonshine source their corn straight from a Victorian farm. This local corn is used to create the sour ‘wash’ (the distillers’ beer loaded into the still) which provides the warm, sweet, strong kick of a true Southern white lightning merged with the clean, refined and utterly enjoyable drinkability of a modern Melburnian drop.
The taste is something so particular, warming your throat all the way to your belly, that you couldn’t forget it, even if you tried. This ain’t whiskey. This is moonshine.
Sweet Tea Shine is made using all Australia Grown Black Tea (the Tea is steeped in High Proof double distilled Moonshine). The tannins extracted from the tea infuse the Shine with a bold flavour easily adapted to many classic cocktails.

The Melbourne Moonshine Single Cask series is our dedication to taking things a little bit slower and making things that bit more special. Its an aged Moonshine and depending on what cask release it is can be aged in Port, Sherry, Australian Wine or even beer barrels.
The first barrels to be release from the series have been aging for over 14 months.

Apple Pie Shine is a traditional ‘sippin’shine often enjoyed during the winter of Southern USA but can be as easily enjoyed the whole year.
The Melbourne Moonshine recipe uses triple distilled Moonshine and a blend of freshly juiced Apples and Spices.
The flavour of the Apple Pie Shine is delicious combination of succulent apple with hits of cinnamon and nutmeg.
The Apple Pie Shine can be enjoyed over ice or warmed/mulled.

So just how did this secret recipe travel way, way down South, from the Appalachian mountains to the middle of Melbourne? Well, that’s a tale that stays with the Misters, Mr. A and Mr. B as they are known, but what we can tell you is that, one windy Melbourne night, the Misters were seated high on a rooftop in Melbourne, sipping booze that was not quite up to scratch.
Mr. B mentioned to his friend that he’d been shining since his youth, starting in his home state of South Carolina. With a final bitter sip of the mass-produced whiskey, the Misters decided they were going to craft a secret distillery of their own. From that moment on, the magic of the mountains came alive in Melbourne, and the Misters never had to worry about sub-par liquor again.
